Soy-glazed tofu and mushrooms is a delicious and satisfying dish that is perfect for vegetarians or anyone looking to incorporate more plant-based protein into their diet. The tofu and mushrooms are marinated in a flavorful mixture of soy sauce, rice vinegar, garlic, ginger, and honey before being stir-fried until golden brown. This creates a sweet and savory glaze that perfectly complements the earthy flavor of the mushrooms and the mildness of the tofu. Tofu is also an excellent source of protein, calcium, and iron, making it a great addition to any meal. Soy-glazed tofu and mushrooms can be served over rice or noodles for a complete meal or as a side dish alongside other Asian-inspired dishes like stir-fried vegetables or dumplings.

Ingredients

  • 1 block (14 oz) extra firm tofu, drained and pressed

  • 8 oz mushrooms, sliced

  • 1/4 cup low sodium soy sauce

  • 2 cloves garlic, minced

  • 2 tablespoons rice vinegar

  • 2 tablespoons honey or maple syrup

  • 1 teaspoon minced ginger

  • 1 tablespoon water

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil

  • Sliced green onions and sesame seeds, for garnish (optional)

Directions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Cut the tofu into cubes and place them on the prepared baking sheet. Bake for 20 minutes, flipping the tofu cubes halfway through, until lightly browned.
  • While the tofu is baking, make the sauce. In a small bowl, whisk together the soy sauce, honey or maple syrup, rice vinegar, minced garlic, and minced ginger.
  • In another small bowl, whisk together the cornstarch and water until smooth.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 5-7 minutes, or until they are tender and browned.
  • Pour the sauce over the mushrooms and stir to coat them evenly. Add the baked tofu cubes to the skillet and gently stir to combine.
  • Pour the cornstarch mixture over the tofu and mushrooms and stir gently to thicken the sauce.
  • Cook for another 2-3 minutes, stirring occasionally, until the sauce is thickened and the tofu is coated.
  • Serve the Soy-Glazed Tofu and Mushrooms hot, garnished with sliced green onions and sesame seeds, if desired.
