Pad Thai is a popular and delicious dish that originates from Thailand. This flavorful noodle dish is made with stir-fried rice noodles, vegetables, protein such as shrimp or chicken, and tossed in a tangy sauce made from tamarind paste, fish sauce, and palm sugar.

Ingredients

  • 2-3 cloves garlic, minced

  • 8 oz dried rice noodles

  • 1/2 lb peeled & deveined shrimp or chicken, or tofu

  • 2 cups bean sprouts

  • 2-3 green onions, sliced

  • 2 eggs, lightly beaten

  • 1/4 cup roasted peanuts, chopped

  • 2-3 tbsp vegetable oil

  • Pad Thai Sauce:
  • 2-3 tbsp tamarind paste

  • 1/4 cup fish sauce

  • 1-2 tbsp Sriracha sauce or chili flakes

  • 1-2 tbsp soy sauce

  • 2-3 tbsp brown sugar

Directions

  • Soak the rice noodles in hot water for 15-20 minutes until soft, then drain and set aside.
  • Combine the ingredients for the Pad Thai sauce in a small bowl and set aside.
  • Heat the oil in a wok or large skillet over medium-high heat. Add the garlic and stir-fry for 30 seconds.
  • Add the shrimp, chicken, or tofu and stir-fry for 2-3 minutes until cooked through.
  • Push the shrimp, chicken, or tofu to the side of the wok and add the beaten eggs. Scramble the eggs until they are cooked, then mix them in with the shrimp, chicken, or tofu.
  • Add the green onions, bean sprouts, and cooked rice noodles to the wok. Pour in the Pad Thai sauce and stir-fry everything together until well combined and heated through.
  • Serve the Pad Thai hot, garnished with chopped peanuts and lime wedges. Enjoy!
