  • 8 oz firm tofu, cut into cubes

  • 6-8 dried shiitake mushrooms, soaked in hot water for 30 minutes

Directions

  • Start by preparing the tofu. Drain the tofu and pat it dry with paper towels. Cut it into cubes and coat the cubes with cornstarch.
  • Heat the vegetable oil in a non-stick skillet over medium-high heat. Add the coated tofu cubes and fry until crispy and golden brown on all sides, about 5-7 minutes. Remove from the heat and set aside.
  • Drain the soaked shiitake mushrooms and slice them thinly.
  • In a large saucepan, heat the vegetable broth over medium heat. Add the minced garlic and ginger and cook for 1-2 minutes until fragrant.
  • Add the sliced shiitake mushrooms, soy sauce, rice vinegar, and sesame oil to the broth. Bring to a boil and then reduce the heat to low.
  • Let the broth simmer for 10-15 minutes until the mushrooms are soft and the flavors have melded together. Season with salt and pepper to taste.
