Ingredients

  • 2 tbsp turmeric powder

  • 2 cups fresh dill leaves, chopped

  • 1 lb firm white fish, such as cod or halibut, cut into bite-sized pieces

  • 1 tbsp fish sauce

  • 1 package (8 oz) rice noodles

  • 1 tbsp minced ginger

  • 1/4 cup water

  • Lime wedges, for serving

  • 1/4 cup rice vinegar

  • 1/4 cup roasted peanuts, chopped

Directions

  • In a bowl, mix the turmeric powder and vegetable oil. Add the fish and toss to coat well.
  • Heat a large skillet over medium-high heat. Add the fish and cook for 2-3 minutes on each side until golden brown and cooked through. Remove the fish from the skillet and set aside.
  • In the same skillet, add the minced garlic, ginger, and red pepper flakes. Cook for 1-2 minutes until fragrant.
  • Add the fish sauce, sugar, rice vinegar, and water to the skillet. Bring to a boil and then reduce heat to low.
  • Add the cooked fish and chopped dill to the skillet. Mix well and cook for 1-2 minutes until the dill is wilted and the sauce is evenly distributed.
  • Cook the rice noodles according to package instructions. Drain and divide into serving bowls.
  • Ladle the fish and dill mixture over the rice noodles.
  • Garnish with chopped roasted peanuts and serve with lime wedges.
