Ingredients

  • 20 large white mushrooms

  • 1 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs

  • 1/4 cup cream cheese, softened

  • 2 tbsps olive oil

  • Salt and pepper to taste

  • Optional: a pinch of red pepper flakes for a little kick

Directions

  • Preheat your oven to 375°F (190°C).
  • Clean the mushrooms: Gently wipe them with a damp paper towel and remove the stems. Set the caps aside and finely chop the stems.
  • Prepare the filling: In a medium bowl, combine the chopped mushroom stems, grated Parmesan, breadcrumbs, minced garlic, chopped parsley, softened cream cheese, and olive oil. Mix well until all ingredients are fully incorporated.
  • Season to taste: Add salt, pepper, and optional red pepper flakes to the filling mixture.
  • Stuff the mushrooms: Using a small spoon, fill each mushroom cap with the prepared mixture, pressing it in gently.
