Ingredients
20 large white mushrooms
1 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 cloves garlic, minced
1/4 cup finely chopped fresh parsley
1/4 cup cream cheese, softened
2 tbsps olive oil
Salt and pepper to taste
Optional: a pinch of red pepper flakes for a little kick
Directions
- Preheat your oven to 375°F (190°C).
- Clean the mushrooms: Gently wipe them with a damp paper towel and remove the stems. Set the caps aside and finely chop the stems.
- Prepare the filling: In a medium bowl, combine the chopped mushroom stems, grated Parmesan, breadcrumbs, minced garlic, chopped parsley, softened cream cheese, and olive oil. Mix well until all ingredients are fully incorporated.
- Season to taste: Add salt, pepper, and optional red pepper flakes to the filling mixture.
- Stuff the mushrooms: Using a small spoon, fill each mushroom cap with the prepared mixture, pressing it in gently.
