  • Handful of fresh parsley and cilantro leaves, chopped

  • Salt and pepper, to taste

  • 2 tbsp olive oil

  • 1/4 cup tahini paste

  • 1 bunch of kale, stems removed and leaves torn into bite-sized pieces

  • 1 garlic clove, minced

  • 2 tbsp olive oil

  • Citrus fruit (orange or grapefruit), juiced

  • Juice of 1 lemon


  • Start by preparing your kale leaves by removing the stems and tearing them into bite-sized pieces.
  • Heat up a skillet over medium-high heat with some olive oil.
  • Once the skillet is hot enough, add the kale leaves and cook them until they become slightly charred on both sides (about 2-3 minutes per side).
  • While the kale is cooking, mix together your green tahini sauce ingredients (tahini paste, garlic, lemon juice, olive oil, parsley, cilantro, salt) in a blender or food processor until smooth.
  • Once the kale is done cooking, remove it from the skillet and transfer it onto a serving plate.
  • Drizzle your green tahini sauce over the top of the kale leaves along with some freshly squeezed citrus juice (orange or grapefruit work well).
  • Serve hot or at room temperature.
