Ingredients

  • 1 cup cashews, soaked overnight

  • 2 garlic cloves, minced

  • 1 onion, chopped

  • 4 cups vegetable broth

  • 1 head of broccoli, chopped into florets

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

Directions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 3-4 minutes.
  • Add the broccoli florets and sauté for an additional 2-3 minutes.
  • Add the vegetable broth to the pot and bring it to a boil. Reduce the heat to low and let it simmer until the broccoli is tender, about 10-15 minutes.
  • In the meantime, drain the soaked cashews and rinse them well. Add them to a blender or food processor along with 1 cup of water. Blend until you have a smooth, creamy texture.
  • Once the broccoli is tender, remove the pot from the heat and let it cool for a few minutes. Then, use an immersion blender or transfer the soup to a blender and blend until smooth.
  • Return the soup to the pot and stir in the cashew cream. Mix well until the soup is creamy and well combined.
  • Season with salt and pepper, to taste.
  • Serve hot, garnished with some extra chopped broccoli or roasted cashews, if desired.
