Ingredients

  • 1/2 block of firm tofu, drained and pressed

  • 4 stalks celery, thinly sliced

  • 2 tbsp soy sauce

  • 1/4 cup chopped roasted peanuts

  • 1 tbsp honey

  • 1/2 lb green beans, trimmed

  • 2 tsp sesame oil

  • 1/4 cup chopped fresh cilantro

  • 2 tbsp rice vinegar

  • 1-2 tbsp chili crisp sauce (adjust to taste)

Directions

  • Preheat the oven to 400°F. Cut the tofu into small cubes and spread them on a baking sheet. Bake for 10-15 minutes or until crispy, flipping halfway through.
  • Meanwhile, blanch the green beans in a pot of boiling salted water for 3-4 minutes, or until they are tender but still crisp. Drain and rinse under cold water.
  • In a large bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, and chili crisp sauce.
  • Add the green beans, celery, cilantro, and peanuts to the bowl and toss to coat with the dressing.
  • Once the tofu is done, add it to the bowl and gently toss everything together.
