Autumn Squash Salad is a vibrant and delicious salad that perfectly captures the flavors of fall. This salad typically features roasted cubes of butternut, acorn, or delicata squash that have been seasoned with warm spices like cinnamon, nutmeg, or allspice.   • 1/2 cup dried cranberries

  • 2 tbsp olive oil

  • 4 cups mixed greens

  • 1 medium butternut squash, peeled and cubed

  • 1/2 cup pecans, toasted

  • 1/4 cup crumbled goat cheese

  • Salt and pepper to taste

  • Dressing
  • 1/4 cup olive oil

  • 3 tbsp apple cider vinegar

  • 2 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste


  • Preheat the oven to 400°F.
  • Place the cubed butternut squash on a baking sheet and drizzle with 2 tbsp of olive oil. Season with salt and pepper to taste. Toss to coat evenly.
  • Roast the squash in the oven for 20-25 minutes, or until it’s tender and lightly browned.
  • While the squash is roasting, prepare the dressing. In a small bowl, whisk together 1/4 cup of olive oil, 3 tbsp of apple cider vinegar, 2 tbsp of honey, 1 tsp of Dijon mustard, and salt and pepper to taste. Set aside.
  • In a large bowl, combine 4 cups of mixed greens, 1/2 cup of dried cranberries, 1/2 cup of toasted pecans, and 1/4 cup of crumbled goat cheese.
  • Add the roasted butternut squash to the bowl and toss everything together.
  • Drizzle the dressing over the salad and toss again to coat everything evenly.
  • Serve the Autumn Squash Salad immediately and enjoy!
