Ingredients

  • 1/2 cup dried cranberries

  • 2 tbsp olive oil

  • 4 cups mixed greens

  • 1 medium butternut squash, peeled and cubed

  • 1/2 cup pecans, toasted

  • 1/4 cup crumbled goat cheese

  • Salt and pepper to taste

  • Dressing
  • 1/4 cup olive oil

  • 3 tbsp apple cider vinegar

  • 2 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

Directions

  • Preheat the oven to 400°F.
  • Place the cubed butternut squash on a baking sheet and drizzle with 2 tbsp of olive oil. Season with salt and pepper to taste. Toss to coat evenly.
  • Roast the squash in the oven for 20-25 minutes, or until it’s tender and lightly browned.
  • While the squash is roasting, prepare the dressing. In a small bowl, whisk together 1/4 cup of olive oil, 3 tbsp of apple cider vinegar, 2 tbsp of honey, 1 tsp of Dijon mustard, and salt and pepper to taste. Set aside.
  • In a large bowl, combine 4 cups of mixed greens, 1/2 cup of dried cranberries, 1/2 cup of toasted pecans, and 1/4 cup of crumbled goat cheese.
  • Add the roasted butternut squash to the bowl and toss everything together.
  • Drizzle the dressing over the salad and toss again to coat everything evenly.
  • Serve the Autumn Squash Salad immediately and enjoy!
