Ingredients

  • 1 cup quinoa

  • 1 cup millet

  • 2 cups water

  • 1 can (14 oz) coconut milk

  • 2 cups fresh or frozen corn kernels

  • 1 tsp smoked paprika

  • Salt and pepper to taste

Directions

  • In a medium saucepan, combine the quinoa, millet, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until the grains are cooked and the water is absorbed. Fluff with a fork and set aside.
  • In a large skillet, heat a tablespoon of oil over medium heat. Add the onion and garlic and sauté until softened.
  • Add the corn kernels to the skillet and stir to combine with the onion and garlic.
  • Pour in the can of coconut milk and add the cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer and cook for 5-7 minutes or until the corn is cooked and the mixture has thickened slightly.
  • Add the cooked quinoa and millet to the skillet and stir to combine with the coconut-corn mixture. Cook for a few more minutes to warm everything through.
  • Serve the coconut-creamed corn and grains hot, garnished with chopped fresh cilantro if desired.
